Again this year I participated in The Great Food Blogger Cookie Swap. I was given 3 food bloggers to send cookies to. The cookie I chose to make for my bloggers was this Peanut Butter Reindeer Cookie.
I found the idea for my cookies from Pillsbury's site. They use their refrigerated ginger cookie dough to make their reindeer cookies. I used a Betty Crocker Peanut Butter cookie recipe for mine.
To decorate I used small pretzels for the antlers, chocolate chips for the eyes and a candied cherry cut in half for the nose ( you could always use half of a red gum drop also)
Betty Crocker Peanut Butter Cookies
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter, softened
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Cream Butter, shortening, sugars, peanut butter and egg until combined. Add in the remaining ingredients and beat until well combined.
Roll cookie dough into a log and wrap in plastic wrap. Refrigerate several hours or overnight.
When ready to bake, Preheat oven to 350 degrees
Slice dough into 1/4 inch slices and form into a triangle shape (shape of a reindeer head).
Place on baking sheet covered with parchment paper and add 2 pretzels for the antlers.
Bake at 350 degrees for 9 to 10 minutes.
Immediately out of the oven place a half of a candied cherry for the nose and 2 chocolate chips for the eyes. Let cool on baking sheets until set then move to a cooling wrack.
