Fiesta Chicken Ravioli Soup

We are now in soup season!  I love soup when it is snowy outside.  I also like having soup because it is an easy supper to fix.  We usually have soup and either peanut butter and jelly sandwich or grilled cheese sandwich.

I also like when I can make my soup in the slow cooker.  Using my slow cooker on weeks when Bill is on call is a plus.  If he is on call I never know when he will be home or if he will get called back out in the evening.  This way supper is ready whenever we can squeeze it in :)


I originally was going to make this with cheese ravioli but while shopping for my ravioli I found chicken ravioli with ricotta cheese...... oh man they sure are good!  I am going to have to try these in a tomato sauce too!  I love to boil my ravioli, pour them in a baking dish and then cover with a tomato/spaghetti sauce then just before taking out of the oven sprinkle mozzarella cheese on top...YUM!  and don't for get to add the side of garlic bread :)

Fiesta Chicken Ravioli Soup

3 boneless chicken breast, cooked and cubed
4 cups water
4 teaspoons chicken broth paste
1 jalapeno, diced
1/2 cup onion, diced
2 garlic cloves, diced
7 ounce can chopped chilies
2 teaspoons oregano
2 teaspoons cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
25 ounce bag chicken ravioli
1 cup whipping cream
1 cup sour cream

Turn the slow cooker onto low and add chicken, water, chicken broth paste, jalapeno, onion, garlic, chilies, and spices.  Cook on low for 6 to 8 hours.  About a 30 minutes before serving turn the slow cooker to high and add the frozen chicken ravioli, after 15 minutes stir in the whipping cream and sour cream.  Soup is ready to serve when the sour cream has melted into the soup.... enjoy!

I serve my soup with crushed tortilla chips in place of crackers.  You can also garnish with some shredded cheese as well.

If you want the soup but do not have a slow cooker or forgot to get it into the slow cooker you can also make this soup on the stove.
