Baked Pancakes

Bill and I had the day off on Friday.  We went to Tipp City and did some shopping at Menards for our bathroom remodel.  On our way home we decided to stop by Charleston Falls to see how it looks when frozen.


I think it is even prettier frozen then when we have visited in the fall to take the kids senior pictures. There was a lot of frozen water coming over the top and forming long icicles down to the bottom of the falls.  I do not remember this much water coming over the falls in the past.  Most of it was frozen however there was still a small amount of water coming down and over the icicles. 


             It was a breezy hike back to the falls but not too bad since the hike was not a long one.


Yesterday Bill and I went to Ludlow Falls to see how these falls looked frozen.  Bill and I both as kids went to Ludlow Falls in December to see the lights on the falls.  The Ludlow Fire Department has not put Christmas Lights on the falls for years.  I wish they would start up the tradition again!


These falls are right under the overpass in the small village of Ludlow Falls so there was not much of a walk at all to view the falls.  Good thing because yesterday was really cold.


Today is Valentines day and for my sweethearts I made Baked Pancakes and bacon.  I really liked the idea of baking the pancakes as it gives me time to throw them in the oven and then fry up the bacon. It worked perfectly, the pancakes came out of the oven just as I was taking the last bit of bacon off the griddle.


The pancakes baked up really fluffy.  They were light and airy.  I think next time before I eat them I would slice them down the middle like I do my biscuits as they were pretty thick and soaked up a lot of syrup.

Baked Pancakes
from my Aunt Teresa's Favorite Pancakes recipe

1 1/4 cup flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoons salt
1 egg
1 cup milk
2 tablespoons oil

Heat oven to 400 degrees.  Place butter in your baking pan/skillet and place in the oven for the butter to melt as the oven heats up.

Combine egg, milk and oil in a bowl, set aside.

Combine all dry ingredients and add to the wet ingredients.

Stir until well combined.  Remove pan from the oven when butter is melted and brush butter up the side of the pan.

I use a scones pan.  I filled each section about 3/4 the way full of batter.  I have also baked my pancakes in an iron skillet before.  You can also use an 8x8 baking pan or a muffin pan as well.

Bake pancakes for 15 minutes or until knife inserted in the middle comes out clean...enjoy!
