Apple Pie Pancakes

Oh wow these pancakes were delicious!  I love apple pie and the pancakes tasted just like it.

The best part of this recipe is the homemade apple pie filling that is drizzled over top of your stack of pancakes in place of syrup.


The apple pie topping is not as thick as pie filling from a can but that worked out well because the syrup reminded me more of the consistency of maple syrup.



I can think of many more ways to use this apple filling as well... such as in a breakfast danish.  Stay tuned to see what other scrumptious recipes I come up with.


Apple Pie Pancakes

Apple Pie Pancake topping:

3 cups apples, peeled and chopped
1 cup water
1/4 cup brown sugar
1/4 cup white sugar
2 tablespoons corn starch
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt

In a sauce pan put the water, sugars, corn starch, cinnamon, nutmeg and salt.  Bring the mixture to a boil.  Add the apples and bring the mixture back to a boil.  Once it is boiling turn the heat down to low and simmer the apples until the desired tenderness.  Mine cooked for about 25 minutes but I also like mine really soft.  If you want a little crunch then cook them for less time.

Pancakes:

1 1/4 cup flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoons salt
1 egg
1 cup milk
2 tablespoons oil


Put the dry ingredients into a mixing bowl, set aside

In a small bowl put the milk, egg and oil, mix well.

Pour the wet ingredients into the dry ingredients and mix until combined.

Cook pancakes on a griddle or skillet with some butter.

Place desired number of pancakes on a plate and drizzle with some apple pie filling.... enjoy!
