Pumpkin Spice Cake Roll

Today I finally got around to some of my fall baking!  First off is a request from Bill.  One of his favorite pumpkin recipes is my childhood favorite Pumpkin Spice Cake Roll.
I love the flavor combination of Pumpkin and Cream Cheese.  This is a cream cheese icing inside but I also like to take pumpkin bread and spread on a layer of plain cream cheese... Yum :)

Making this even better is that it is super easy to make.  It looks like it would take some time but in reality it is quick and simple.  Also in the picture is Pumpkin Cupcakes that are coming soon to the blog... and of course Cream Cheese Frosting ;)


Pumpkin Spice Cake Roll
my Mom's recipe :)

Cake:
3 eggs
1 Cup sugar
3 teaspoon cinnamon
1/2 teaspoon salt
2/3 Cup pumpkin
1 teaspoon lemon juice
1 teaspoon ginger
3/4 Cup flour
1 teaspoon baking powder
1/2 teaspoon nutmeg

Icing... mix together
8 oz cream cheese
1 Cup powdered sugar
4 Tablespoon butter, softened
1/2 teaspoon vanilla


Beat eggs, gradually add sugar.  Add pumpkin and lemon juice.  Add flour, cinnamon, salt, ginger, baking powder and nutmeg, mix well.  Pour into a 15x10x1 inch greased and floured jelly roll pan and bake at 375 for 15 minutes.  Turn onto towel sprinkled with powdered sugar.  Roll the towel and cake together like a jelly roll.  Cool.  Unroll and spread with icing.  Roll cake back up and chill until ready to serve.
