While down visiting Billy and Amanda in January, I tried Everything bagels.  It never seemed appealing to me to have a bagel and onion together.... I have always liked Cinnamon Crunch bagels. However after trying the Everything bagel, I was a fan!

Oh look at all the yummy everything toppings showing through on top of the cut up bagel chunks!

All the everything flavors on top of the bagels made for a great addition to regular Egg Casserole.  I thought the bagels would be more crisp but they mostly baked up soft.  Next time I am going to toast my bagels before cutting them up for the casserole and see if that makes for a crispier texture.

Everything Bagel Casserole

4 Everything bagels, cut into pieces
9.6 oz pkg Jimmy Dean Turkey Sausage Crumbles (can also use regular sausage, browned)
12 eggs
1 1/2 cups half and half
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon ground mustard
2 cups shredded cheddar cheese

Cut bagels into chunks and place in a 9x13 baking dish.  Sprinkle sausage and 1/2 of the cheese over the bagel pieces.

Mix together in a bowl, eggs, half and half, salt, pepper, onion powder, garlic powder and ground mustard.

Pour egg mixture over the bagel mixture.  Cover dish with foil and place in the refrigerator overnight.

When ready to bake, preheat oven to 375 degrees and bake 30-40 minutes (mine took 35 min) until egg casserole is set, remove from oven and sprinkle remaining half cheese over the top.  Place back in the oven until cheese is melted.

Bill, Billy and Amanda added salsa to the top of their casserole before eating.
