Perfect Hard Boiled Eggs



I have been making my hard boiled eggs wrong all my adult life!  I have tried using out of date eggs to make them easier to peel but that also did not always work.

I've tried different techniques to make them easier to peel, such as, adding salt and vinegar to the water, rolling the egg on the counter top, shaking the egg in a glass of water ect..... nothing was working until I read a post by the pioneer woman for Easy to peel eggs


I along with probably many of you, have a Betty Crocker Cookbook,  shortly after we were married that is where I read to cook my eggs using the cold water method.  Which is to cover eggs with cold water and bring them to a boil, remove them from the heat and allow to sit for 15 minutes, drain and cover with cold ice water.  They cook good this way but are so hard to peel, I end up taking big chunks of the egg white off with the peels.


As you can see in the pictures above the shells come off in pretty big chunks.  It turns out that boiling the water first makes all the difference!


I bring the water to a boil, then gently lower my eggs into the boiling water


After all my eggs are in the boiling water I turn the heat down to a simmer and continue to cook the eggs for 13 minutes


After gently cooking for 13 minutes, take them off the stove and carefully drain out the boiling water.  Fill the pan with cold water and ice cubes.  Once the eggs are cool enough to handle just peel off the shells..... oh what a wonderful site when you have perfectly peeled eggs.
