Cupcakes for 2 with Cherry Wine Buttercream

This Valentines Day there is only Bill and I.  I wanted cupcakes and ice cream.  The only problem is with making cupcakes I end up with 2 dozen.  

I decided it was time for me to come up with a recipe for just Bill and I since I rarely have anyone home anymore.  You will probably start seeing more recipes for 2 not only because we are empty nesters but I also do not need the temptation to eat more.



I call these cupcakes for 2 but it actually makes 4 cupcakes.  I figured I always want seconds!  So if you only want 1 each then you can serve Cupcakes for 4.


The icing I used is adapted from my usual go to icing.  Except since it is Valentines day and these are adult cupcakes I added some Sweet Cherry Wine.  MMMMM the hint of cherries is an awesome addition to the almond flavoring.  To frost the cupcakes I used Wilton tip 1M.  Both the cupcake recipe and icing recipe were exactly on target with no left overs.  I was very pleased with the flavor and texture of these cupcakes.

They were super easy to make.  I started out with some cake mix and then added in some extras. Since I will have left over cake mix, I just put it in a ziplock bag and stuck it in the freezer for next time.

Cup Cakes for 2 

1/4 Cup french vanilla cake mix
2 Tablespoon flour
2 Tablespoon sugar
1 ounce water
3/4 teaspoon oil
1/2 teaspoon vanilla
2 Tablespoon sour cream
1 egg

Preheat oven to 350 degrees

Place 4 liners into a cupcake pan.

Put everything into a mixing bowl and mix until well blended  

Divide between 4 cupcakes

Bake at 350 degrees for 18 minutes

Cool completely then frost


Cherry Wine Buttercream

1 t dream whip
1 T Cherry Wine
1/4 t vanilla extract
1/2 t almond extract
5 T butter, softened
1 1/2 t whipping cream
1 C powder sugar

Put all ingredients into mixing bowl and whip together until frosting forms. You can frost the cup cakes however you like, I used Wilton tip 1M
