Mexican Meatball Soup

I have for you another great crockpot recipe.  I have joined a facebook page called Tasty Slow Cooker Recipes  On this facebook page you will find lots of wonderful slow cooker/crockpot recipes posted by myself and my blogger friends.

This soup was super easy.  The hardest part if you call it that was cutting up the onion and jalapeno. After that I just threw everything in the crockpot and turned it on.



Today I had to go into the office for an Employee Engagement presentation. I knew I would still have work to complete when I returned home so  I wanted to have supper ready to eat.  Using the crockpot for this is perfect.  I love having the house smelling delicious from supper cooking all day and having supper ready when we are.  When the soup starts smelling all scrumptious it confuses the dogs as they think it is supper time before it is.

 
My favorite part of the soup was the meatballs.  I just used frozen meatballs but you could always make your own.  After cooking all day the meatballs were really soft and had the delicious sauce cooked threw them.  I was going to add them whole to the soup but the meatballs I purchased were pretty big so I cut each meatball in fourths.  This made them the perfect size for the soup.

Mexican Meatball Soup

1/4 to 1/2 onion diced up
jalapeno diced up
20 oz bag meatballs, cut each into 4ths
28 oz can crushed tomatoes
15 oz can tomato sauce
1 pkg taco seasoning
7 oz can green chiles
15.5 oz can chili beans
15.5 oz can pinto beans
15.25 oz can black beans
15.25 oz can corn
2 C beef broth

Dice up the onion and jalapeno.  Put all ingredients into the crockpot and cook on low for 6 to 8 hours.  Can serve with crushed tortilla chips, sour cream or cheese.
