Beer Cheese Dip

Here is my attempt at the Beer Cheese Dip that Bill and I shared while we were in Indianapolis a few weeks ago.

Bill and I attended the Bloomington Gold Car Show, it is the biggest Corvette Car Show around.


The event was held at the Indianapolis Motor Speedway.  Here is a picture of Bill and I taking laps around the track.


We went to the car show with a wonderful group of friends from our car club.  A good time was had by all!!


On Saturday of the car show it rained, so Bill and I set out on an adventure.  We ended up at the Broad Ripple Brewpub.  This is where I had my first taste of Beer Cheese Dip.  It was really good however I wish we had pretzels to dip in it instead of bread slices.


That is how my recipe for Beer Cheese dip was born.

Beer Cheese Dip

1/4 cups flour
3 Tablespoon butter
1 teaspoon dry mustard
1/2 cup milk
1 cup beer
12 ounces shredded cheddar cheese
8 slices bacon, cooked and chopped

In a sauce pan, melt the butter.  Add the flour and dry mustard and stir until combined.  Pour in the milk and beer and cook while stirring until thickened (3 to 5 minutes) stir in the cheddar cheese and cook until melted.  Before pouring into a bowl stir in half of the cooked bacon.  Garnish the top with the remaining bacon and enjoy!
