Peanut Butter Cup Cupcakes

Here is my third flavor of cupcakes that I took to our Corvette Club Picnic this summer.  These were super peanut buttery good!

Peanut Butter Cup Cupcakes

1 1/4 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup peanut butter
1/2 stick salted butter, softened
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla
2/3 cup milk

Whisk together flour, baking powder and salt in a bowl, set aside

Beat together peanut butter, butter and brown sugar in a large bowl at medium speed until blended. Add egg and vanilla and beat until fluffy.

Reduce speed to low and add flour mixture ad milk alternately in batches, beginning and ending with flour mixture.

Divide batter among lined muffin cups and bake in middle of oven until pale golden, 18 to 20 minutes.

Peanut Butter Buttercream

1/2 cup butter, softened
1 cup peanut butter
3 tablespoons whipping cream
2 cups powdered sugar

Whip butter and peanut butter.  Gradually add in the powdered sugar, when it gets thick add the whipping cream a tablespoon at a time until all the sugar is mixed in.  Continue beating until frosting is good and fluffy.

Ice cupcakes and garish with a peanut butter cup if desired
