I have for you another quick and easy dinner. If you are like us sometimes you need a dish you can throw together and have it ready to eat in under an hour.
This would have been a good supper for me to make this past weekend. I was gone the whole entire weekend. It felt like all I did was sleep at home and then got up and left each day not returning too much before it was time to go back to bed.
On Friday Mom, Cally and I went to Bainbridge, Ohio. We went to see about their Leaves festival. We did not stop as it looked like a big garage sale. Instead we went to an Amish Bakery, Amish General Store and Amish furniture store.
On Saturday Bill and I traveled to Rio Grande, Ohio and attended the Bob Evan's Farm festival.
They were making bean soup on the open fire. We bought a pail of soup and it was really good.
Here they are making Sorghum. We bought us a pint so stay tuned to see what I make with it.
On Sunday Bill and I went on the All Corvette Fall Colors Tour in Southwest Ohio. The last I heard there were 241 corvettes registered for the tour.
We all try to stay together as we travel the back roads but as we come to stop signs sometimes people get in our line of cars, as you can see the green car in our group above. Most times people realize we are traveling together and they wait and let us all go together.
Of course I had to take my selfie stick which Bill just loves so much :) It was a nice day for October on Sunday so we had the top out of the car. I stuck my selfie stick out the roof and took this picture of the cars in front of us going through the covered bridge.
We had a fantastic fall weekend. I think it is going to get cold by the end of the week so it was nice to get out and have one last hoopla before we have to put the car away for the winter.
I used sausage ravioli in my dish but you could use beef or cheese if you wish. If I am making a big dish of baked ravioli I have also used beef and cheese together. This can be baked in individual bowls as I did or bake it in a 9x13 pan.
Baked Sausage Ravioli
25 ounce package frozen sausage ravioli
24 ounce jar spaghetti sauce
8 ounces shredded mozzarella cheese
Preheat oven to 350 degrees
Boil ravioli until tender. Pour ravioli into a baking dish that has been sprayed with cooking spray.
Pour spaghetti sauce over ravioli and stir to coat.
Bake in 350 degree oven for 30 minutes or until heated through.
Cover the baked ravioli with shredded mozzarella cheese and return to oven for about 5 minutes or until melted.... enjoy!
